How many times can a 110 Jack be re-terminated?

Leviton tests the jacks for as many as 20 re-terminations so as long as the jack is not mistreated you can terminate the jack about 20 times.

Can you use speaker wire for the RCA 110 connector?

No you can not the speaker wire is too large of a gauge and speaker wire is stranded cable and the RCA 110 is meant for solid core cable so you would need to use solid core UTP cable.
